Avocado Toast 3 Ways

Who doesn’t love a good avocado toast? You can try one of my favorite variations or create your own. Really it depends on my mood of the day, or what I have in my fridge. Get creative! This is another dish that is so easy to make for yourself without overspending. I love avocado and they are a great source of potassium, dietary fiber, and healthy fats your body needs.  This is my go to snack after a workout, or my go-to breakfast when I am pressed for time.


The spread is the same for all three so prepare that first.

The spread:

Ingredients:

3 ripe avocados, peeled and smashed

1 lemon, juice and zest (this also helps keep it from browning)

1 tablespoon olive oil

1 teaspoon of cumin

1 tablespoon of nutritional yeast

1 teaspoon pink himalayan sea salt

½ teaspoon black pepper


Directions:

1. Mix everything together in bowl, done!


The Toast:

I like to use Ezekiel bread, whole wheat English muffin, or sliced sweet potatoes.

Slice the sweet potatoes lengthwise and cook in the oven for about 20 minutes at 400F ahead of time. Pop them in the toaster when you are making your avocado toast to heat them up.  You can also pop the slices in the microwave for 30 seconds at a time until they are tender then toast them up if you are pressed for time, and don’t have any already prepared.

Assemble:

Version 1: Spread the avocado over toast and top with paper thin sliced radishes. Drizzle with olive oil, sprinkle with salt and pepper, squeeze of lemon and enjoy!

Version 2: Spread the avocado over toast and top with a fried egg. Sprinkle with “everything but the bagel” seasoning you can find at Trader Joe’s aka crack in a bottle.  

Version 3: Spread the avocado Toast over the sweet potato slice. Crumble on feta, and sprinkle with pomegranate seeds. Drizzle with olive oil and enjoy! Try this, it’s fire.
