Kale and Shaved Brussel Sprout Salad with a Sesame Soy Vinaigrette

SHAVED BRUSSEL SPROUT AND KALE SALAD

with a Sesame Soy Vinaigrette

Ingredients:

2 1/2 cups kale, thinly sliced

2 1/2 cups brussel sprouts, thinly sliced

3 radishes (thinly sliced) They should be paper thin.

2 tablespoons of fresh cilantro, chopped

½  teaspoon of toasted sesame seeds

½ teaspoon of hemp seeds

¼ cup raw almonds, sliced or cashews (For cashews: give them a rough chop to make it easier to eat.)

Optional: protein of choice like grilled chicken, salmon, or tofu

Tahini-soy dressing:

2 tablespoons tahini

(Tahini is a paste made from sesame seeds. It has an amazing nutty, toasty, creamy flavor. It is used in a lot of the Mediterranean and Middle Eastern food. I love it in dressings, marinades, and dipping sauces. You can usually find it in most grocery stores. I buy mine in a jar from my local health food store located in the condiment section.)

2 tablespoons coconut aminos or low-sodium soy sauce.

1 teaspoon of honey or organic brown sugar

¼  teaspoon of chili flakes (Add more if you like it spicy.)

½ teaspoon of sriracha

1 tablespoon of sesame oil

1 tablespoon of Dijon mustard

The zest and juice of one lime

pinch of salt and pepper

~ 1/3 cup of olive oil (Drizzle in until you have reached your desired consistency for dressing.)

Whisk everything but the olive oil together in a small bowl. Slowly drizzle in the olive oil until it is smooth, shiny, and you have your desired consistency. Season with salt and pepper to taste.  Set aside.

Directions:

  1. After prepping the veggies for the salad, in a large bowl mix together the kale, Brussels sprouts, radishes, cilantro (save half for garnish).  

  2. If the nuts are raw, lightly toast them in a pan to bring out the oil and a ton of flavor. Don’t burn them! Just place the nuts in a dry pan (no oil) with the heat off.  Then turn the heat on to medium/medium low. The nuts will release their natural oil and bring out a beautiful nutty flavor. Move the nuts around the pan with a spatula so they don’t burn. When the nuts are fragrant turn off the heat and set aside.

  3. Toss the salad in the dressing and garnish with remainder of the cilantro and sprinkle with sesame seeds, hemp seeds, and nuts
